What's for Dinner: Weekly Menu 3/1

I'm in the middle of writing up my menu for this week and realize I didn't post menus for last week (or week before eep!)  Thanks for the emails and messages on my other message boards asking me to post- I know how easy it is to get in a dinner rut and I'm super happy to help!

Not in a rut per se, just loved breakfast for dinner (or Brinner!) and had it twice in one week! Noms!

One night we planned Leftover Night due to a extra large batch of Paella and Eggplant Bolognese.  Leftover night is good too!

Garlic Shrimp CousCous

Roast Chicken and Veggie Soup

Poached Egg on Portabella with Paleo friendly Hollandaise Sauce

Sweet Potato Hashbrowns, Turkey/Spinach/Mushroom Omelets w/ avocado

Last Week:

Ginger Chicken, Roasted Carrots and Zuchini

Roast Sticky Chicken (Crockpot), Roasted Cauliflower, Steamed Spinach

Beef Tagliata, Broccoli, Roasted Red Pepper, Onion Casserole, sliced tomatoes

Sweet Potato Chili

Beef Stroganoff Patties (Was soo good! ), Roasted Parsnips, Steamed Asparagus (steam in beef broth with seasonings, noms!)

Tonight Husband wanted to Grill - so he is out picking up ingredients for lettuce wrapped burgers, veggie kabobs, sweet potato fries.
