- Beef Stroganoff/ Soup (This was good, needs more zucchini for the noodle effect).
- Walnut Pesto tossed with sauteed chicken, sliced yellow squash, spinach (was supposed to be a Pad Thai Night, but discovered too late we're out of almond butter, so had to improvise, had leftover pesto in the freezer).
- Shrimp Curry over Cauliflower Rice
- Apple Shallot Pork-chops, Mashed Parsnips, Steamed Asparagus

What's For Dinner: Weekly Menu 6/3
Last week's menu ended with a bit of leftovers, pushed some days off to this week. One of the meals from last week had Sunday night of this week instead.
