What's for Dinner: Weekly Menu 2/10


  • Open-face Mushroom Burgers and Yam Fries and Side Salad
  • Sweet Potato Chili -(The site I get this one is now dead! So glad I had a print out saved, but will need to type it up here to share!)
  • Pho Soup (trying to find good, paleo friendly version, this is more primal if you do rice occasionally)
  • Valentine's Dinner with family: Sushi, something all 4 of us love!

Lunches and the Lunch Crock Pot

I have had many people ask what I do for lunch daily as a lot of people are used to making a sandwich every day.  Even before Paleo I have always been an "eat the leftovers" gal so moving to Paleo was no different. 

For 5 years I brought leftovers in a plastic container similar to the ones you get lunch meat in, and ate it cold.  It was what it was. 

A few weeks ago, however, a friend mentioned seeing the funniest thing on a coworkers desk  - a lunch crock pot. 

Wait, what??  I needed this!  A bit of googling and found the one above on Amazon (At the time $16, the price fluctuates back up to $20 here and there depending on color). 

Pictured is leftover Beef Stroganoff Soup.  I arrive to work around 9:30am, get settled in, plug my crockpot in and everything is piping hot by Noon!  I have had cold lunches for years since my workplace never had a microwave, but this thing became the best present to myself EVER!

The insert comes out so you can carry it back and forth from home, and the base you can leave at work.  I tend to be protect of my stuff so just keep it in my tote bag and carry back and forth every day.

So if lunches are still a little bit of a stress for you, just make a little extra at dinner, put it away in the fridge in your lunch crock pot, and heat and enjoy the next day!

What's For Dinner: Weekly Menu 2/3

A little/a lot behind - hoping to do better this year!  Still doing paleo and going strong! This week's menu plus some of the past months recipes to give you ideas since I'm going simple this week!

Uncured Beef dogs, Chicago style on Romaine leaves! With Yam Fries.

Beef Stroganoff Soup - so good!

"Shepards Pie" done with mashed cauliflower.  I omit the peas and do french style green beans instead.  Side Salad.

Pad Thai Chicken

Shrimp Curry

Chicken and Shrimp Paella

Crock Pot Mushroom Roast, Mashed Cauliflower, Steamed Carrots

Jambalaya with cauliflower rice
Jambalaya

Honey Glazed Chicken, Roasted Broccoli/Veggie Casserole, Roasted Parsnips

Homemade Mushroom soup (YUM!) with sauted porkchops, and spaghetti squash cooked with garlic, oil and shredded zucchini.

Chicken Adobo, carrots and broccoli stir-fried crisp

Moroccan Burgers, Garlic Aoili, Salad, Yam Fries

Clams Italiano and Rataouille

Captain Hindsight here - this menu would have been handy earlier in the day, or week, but maybe helpful for future party ideas.

Our Veggie Tray included: Celery Sticks, Carrot Sticks, Radishes

We did these Chicken Drumsticks and passed Franks Red Hot separately allowing everyone to eat these.

We also did these Herb Fries halfway down the page.

The Grub Meatballs were not bad, we prefer a sausage/grnd beef mixture and may alter in the future.

Did not try, but these Buffalo Wings looked good too.

These Stuffed Mushrooms looked good for another time too.
